The trip has been accurately designed for coffee aficionados and growers alike, your senses will be charmed by the colors and the flavors of a magical forest.
You will take part in the most crucial stage of coffee farming: harvesting!
We will teach you how to spot different coffee varieties, how to best nurture them and, finally, you will be able to see for yourself the unique approach that we’ve proudly brought into coffee farming: permaculture.
And it gets better: we will show you the last stage of coffee farming, drying. At this point, care is everything, and you will be amazed at our growers’ keen attention to detail. That’s the real specialty!
By the way, you will learn all this coffee knowledge while living in the heart of the Amazon Forest, surrounded by the Yanesha way of life, and their all-embracing worldview.
Program.
DAY 1. DEPARTURE TO OXAPAMPA
The time of arrival in Peru (Jorge Chavez airport, Lima) will vary depending on the flights you decide to take from your place of origin, therefore, we will take individual considerations about the arrivals and schedules to provide you with all the guidance you will need, in case you were to spend a day in Lima.
6:00 PM The jungle trip begins! The first destination is the bus station, located on Avenida Javier Prado, where a car with driver will take you to the Oxapampa forest. A trip that lasts 9 hours.

DAY 2. GETTING TO KNOW OUR PROJECT AND PHILOSOPHY
8:00 AM Welcome and accommodation in the lodge
9:00 AM Breakfast
Breakfast will be served at the lodge every day: local products and (really) good coffee.
11:00 AM Time for a city tour, you will get to know the surroundings and be given indications of the location of the main services you may need, along with some basic orientations.
1:00 PM Lunch at the lodge.
3:00 PM Departure to the Tsachopen Native Community, where we will be welcomed by the Yanesha people. Later on, you will attend the presentation of the 7 Elements Peru project, and finally all the information and recommendations for the following days. Return to Oxapampa.
*Dinner with activities in charge of the organization.
DAY 3. THE PRINCIPLES OF PERMACULTURE APPLIED TO COFFEE AND THE DIFFERENT VARIETIES
7:00 AM Breakfast.
8:00 AM Departure to the community of Tsachopen, located 15 km from the lodge.
Today our first host will be Marcial, one of the founders and pioneers in embracing permaculture in coffee farming with the Mayar lot. Marcial will share his experience and we will learn firsthand about the varieties of coffee and how you can manage a plantation by harnessing the techniques and principles of permaculture.
1:00 PM Lunch, prepared by our Yanesha hosts Eva and Irma, mother and daughter, women coffee growers, and the artisanal soul of the project.
Together, we will visit their coffee plantations and appreciate the various techniques of coffee harvesting and the application of various permaculture techniques. Quick note: they were the winners of the Permaculture 2020 Award in the project.
Return to Oxapampa, free evening.
DAY 4. COFFEE HARVESTING AND PULPING
7:00 AM Breakfast.
8.30 AM Departure to Tsachopen, Zipizu area, where we will join the project growers and actively participate with them in harvesting coffee in the various plantations. We will put our harvesting skills to the test!
1.00 PM Lunch in the community.
In the afternoon we will learn about the second stage: the pulping of the pergamino coffee, that is, the process of removing the skin or pulp from the coffee berries.
That exclusively happens in the wet mill and it should be done preferably within six hours after the harvest, to avoid the defect known as “ferment”. Our farmers take this task really seriously, as it’s a vital part of the process.
Return to Oxapampa, free evening.
DAY 5. NATIONAL PARK YANACHAGA CHEMILLEN
8:00 AM Breakfast.
Today we will have the chance to get in touch with the local flora and fauna. We will visit the Yanachaga Chemillén National Park, San Alberto.
09:00 AM After breakfast, departure to Yanachaga Chemillen National Park, San Alberto area.
The tour starts with a 20 minutes car trip. After that, we will start our trekking through the incredible and diverse wild flora of the high jungle ecosystem (primary forest and cloud forest).
The first stop is at the Refugio el Cedro (checkpoint), for sign-up, and then we will continue walking for about 4 hrs.
During the walk, we will identify various native trees such as Ficus, Cedar, and Diablo Fuerte. And it gets better: epiphytes, orchids, and a beautiful waterfall with hanging bridges.
Lunch on the way.
4:00 PM Return to Oxapampa.

DAY 6. THE VERY SPECIAL MAKING OF SPECIALTY COFFEE
7:30 AM Breakfast
8:00 AM Today we will learn about specialty coffees with the Ballesteros family. Patricia, our hostess, will show us the process for obtaining natural coffee. The method consists of drying the whole cherry after its harvest, without removing the skin. The profile of this specialty coffee is marked by low acidity, a strong body, and fruity to winy flavors.
1:00 PM Lunch in the community.
In the afternoon we will meet Rosario, a coffee grower and artisan, and Paco, a coffee grower and specialist in Yanesha medicinal plants.
Return to Oxapampa, free evening.
DAY 7. HUANCABAMBA VALLEY
7:30 AM Breakfast
8:00 AM Today we will explore the Huancabamba valley, a district of Oxapampa, producer of granadilla and rocoto, and of course, specialty coffee.
Together with the Inga family, our hosts, we will get to know the heritage and traditions of a coffee family, by touring their coffee plantations, nurseries, and special coffee processing.
Lunch at the Yanachaga hacienda and return to Oxapampa.
Free evening.
Day 8. THE COFFEE OF THE MOUNTAINS
7:30 AM Breakfast
8:00 AM Right after breakfast we will meet the Velita family, in the village of Santa Teresa, located 2 hours from the city of Oxapampa.
At this point, we will learn why each one of our coffees is special, and its origin.
You will understand and learn more about the profiles of specialty coffee and the diversity of our lots.

Return to Oxapampa. Free evening.
DAY 9. VILLA RICA LAGOON, FORESTS, AND TASTING
7:30 AM Breakfast
8:00 AM Departure to Villa Rica, where one of the main laboratories for cupping is located.
Cupping is a quantifiable and widely used method of analysis that allows evaluating a coffee sample, from its overall quality to individual characteristics (e.g. acidity or body) and specific flavor notes.
1:00 PM Lunch
Visit the beautiful El Oconal lagoon, home to local birds and wildlife.
Free evening
Return to Oxapampa.
DAY 10. ENVIRONMENTAL WORK IN THE COMMUNITY AND TIME FOR SHOPPING
7:30 AM Breakfast
10:00 AM In the morning we will visit La Lupuna conservation area
12:00 AM Picnic lunch
03:00 PM El Pago a la Madre Tierra ceremony, an ancestral activity that should favor spiritual connection.

DAY 11. CULTURAL PRESENTATION, FAREWELL
7:30 AM Breakfast.
8:00 AM We will spend the morning at a coffee shop, to taste and partake in the various methods of coffee extraction.
1:00 PM Meat-based lunch, offered by the butchery “Campo”.
3:00 PM Farewell ceremony, awarding of certificates.
7:00 PM Pick up for transfer to the bus station that will take you back to Lima.
